Curly endive develops in loose heads with small, lacey outer leaves that curl at the tips and have a green border. A compact heart of off-white leaves grows within the head. The taste of the outer, deeper leaves is distinct and mildly bitter. The inner, lighter-colored leaves have a milder taste, a slight sweetness, and a more delicate feel.Â
Curly endive contains significant amounts of Vitamin A and Vitamin K as well as some Vitamin C. Additionally, it contains phosphorus, potassium and dietary fiber with the darker green leaves offering more nutrients than the white leaves.Â Itâ€™s used in many dishes, mainly salads. It can be roasted, grilled or braised to create a hearty texture and tart, buttery flavor.
