Curly endive develops in loose heads with small, lacey outer leaves that curl at the tips and have a green border. A compact heart of off-white leaves grows within the head. The taste of the outer, deeper leaves is distinct and mildly bitter. The inner, lighter-colored leaves have a milder taste, a slight sweetness, and a more delicate feel.
Curly endive contains significant amounts of Vitamin A and Vitamin K as well as some Vitamin C. Additionally, it contains phosphorus, potassium and dietary fiber with the darker green leaves offering more nutrients than the white leaves. It’s used in many dishes, mainly salads. It can be roasted, grilled or braised to create a hearty texture and tart, buttery flavor.
